I love this snack to keep everyone’s energy high and their stamina strong.

GRANOLA BLONDIES
I know what you’re thinking...ah-ha, finally got her.  Here’s what she really considers dessert--granola bars.  Well, take a breath and read on.  These hearty bars, while filled with crunchy granola, hardly taste like they’re good for you.  Chewy, delicately sweet and satisfying, these bars are a great snack when you’re looking for a pick-me-up of energy.  The nutty granola adds such vitality and energy, you’ll feel just like that little pink bunny...

MAKES 18-20 BLONDIES

1 cup whole wheat pastry flour
1 teaspoon baking powder
½ teaspoon baking soda
generous pinch sea salt
1/4 cup Olivado avocado oil
½ cup Suzanne’s Specialties Maple Brown Rice Syrup
1 teaspoon pure vanilla extract
½-2/3 cup unsweetened organic almond or soy milk
2 cups unsweetened granola with nuts (pecans or walnuts are best)

Preheat oven to 350o and lightly oil and flour a 9-inch by 13-inch baking pan.

Combine flour, baking powder/soda and salt in a mixing bowl and whisk briskly.  Mix in oil, rice syrup and vanilla.  Slowly mix in milk to create a smooth spoonable batter.  Fold in granola, mixing well.  The batter will be thick.  Spoon evenly into prepared pan and bake until the bars are golden and feel firm to the touch, 25-30 minutes.  Cool bars in the baking pan for about an hour before slicing into bars or squares.
