Weekend One - Orientation & Whole Grain Cooking
Saturday
Morning - orientation and introduction of program and lecture with Q&A on the theory behind the cooking.
Afternoon - discussion and demonstration of whole grain cooking and cooking styles.

Sunday
All day hands-on cooking and discussion of whole and cracked grains.

Weekend two - Protein / Beans, Tofu, Tempeh & Seitan
Saturday
Morning - discussion and demonstration class on cooking beans.
Afternoon - hands-on cooking and discussion for bean dishes.

Sunday
Morning - demonstration and discussion of tofu, tempeh and seitan.
Afternoon - hands-on cooking and further discussion of tofu, tempeh and seitan.

Weekend three - Land & Sea Vegetables / Diagnosis
Saturday
Morning - demonstration and discussion class on vegetables and cooking styles.
Afternoon - hands-on cooking and discussion of vegetables.

Sunday
Morning - hands-on cooking and discussion of sea veggies.
Afternoon - lecture on diagnosis with Patrick Riley.

 

Weekend four - Breakfast / Pasta/ Soups & Stews /Integrative Nutrition
Saturday
Morning - demonstration, discussion and hands-on class on breakfast with Robert Pirello.
Afternoon - demonstration, discussion and hands-on class on pasta with Chef Salvatore DiCristofaro.

Sunday
Morning - hands-on class and discussion on soups and stews.
Afternoon - lecture and discussion on integrative nutrition with Bernardo Merizalde, MD.

Weekend five - Menu Planning / Integrative Nutrition
Saturday
Morning - menu planning discussion and exercise.
Afternoon - hands-on execution of menu plans.

Sunday
Morning - full menu design and hands-on execution.
Afternoon - second lecture and discussion on integrative nutrition with Bernardo Merizalde, MD.

Weekend six - Conditions / Home Remedies / Desserts
Saturday
Morning - demonstration, lecture and discussion of health conditions and home remedies.
Afternoon - discussion and hands-on cooking for health conditions.

Sunday
Morning - demonstration and discussion on desserts and baking.
Afternoon - hands-on dessert and baking.
Graduation and presentation of certificates.

Throughout the program, Christina will also teach knife skills, cutting styles, seasonal cooking, as well as share with you her wealth of knowledge on whole foods, natural living and integrative medicine.
