2 cups cooked/ canned cannelloni or great northern beans
€_ red onion, finely diced
1 clove fresh garlic, crushed
3-4 sprigs fresh basil, shredded
2 roasted red peppers, diced
Extra virgin olive oil
Sea salt
Cracked black pepper
Fresh lemon juice
1 whole wheat baguette, sliced into 1-inch diagonal slices
Directions
Combine beans, onion, garlic, basil and peppers in a mixing bowl. Season to taste with oil, salt, pepper and lemon juice and set aside so the flavors can develop.
Place a flat bottomed skillet over medium heat. Lightly brush each slice of bread and lay in the hot pan. Cook until the edges are golden brown, about 2-3 minutes and then turn the bread to brown evenly on both sides.
To serve, mound beans on toasted bread and drizzle with olive oil. Makes 10-12 servings.
