Waldorf Salad

Yup...a vegan Waldorf salad...just as rich and creamy; just as yummy as the original...only heart healthy.

Ingredients
2 Granny Smith apples, seeded and diced, do not peel
1 cup walnuts, lightly pan toasted, coarsely chopped
1/2 cup raisins
2 stalks celery, diced
Several leaves romaine lettuce, washed, left whole

Tofu mayo
1 brick silken tofu
Juice of 1 lemon
Sea salt, to taste
2 tablespoons brown rice syrup
Spring or filtered water

Directions 
Combine apples, walnuts, raisins and celery in a mixing bowl. Lay lettuce leaves on a shallow platter. Combine all ingredients, except water, for mayo in a blender. Puree until smooth, adding water in small amounts to create a creamy mayonnaise consistency. Spoon tofu mayo over salad ingredients and toss to coat. Spoon salad over greens and serve. 

Makes 3-4 servings.
