A classic Middle Eastern grain salad that is at its best when tomatoes are in season at their succulent sweetest.
Ingredients
4 cups water
2 cups bulgar
1 cup fresh flatleaf parsley, minced
1/4 cup fresh mint, minced
2 plum tomatoes, diced
1 cucumber, diced
2 lemons, juiced
1/4 cup extra virgin olive oil
1/2 cup black olives, minced
Directions
Bring the water to a boil and stir in the bulgar and salt cover and turn off heat. All stand for fifteen minutes. Fluff with a fork and transfer to a mixing bowl. Mix in the remaining ingredients and season with salt. Chill completely before serving.
Makes 6-8 servings
