Sweet Marinated Tofu with Spicy Peanut Sauce

A main course tofu dish that has something for everyone. Spicy, rich, sweet and completely satisfying.

1 lb tofu-extra firm style, sliced in half and then in 1/2-inch thick slabs

1/2 cup soy sauce
1/4 cup brown rice syrup
1/4 cup toasted sesame oil
2 teaspoon prepared mustard
2 tablespoon fresh squeezed ginger juice
3-4 cloves fresh garlic, crushed

Spicy Peanut Sauce
toasted sesame oil
1 tablespoon onion, grated
1 clove garlic, minced
2 teaspoon chili powder
1 cup unsweetened peanut butter
soy sauce
1 tablespoon brown rice syrup
juice of 1 lemon

spring or filtered water

Place tofu slabs on a dry kitchen towel and pat excess water off the surface. Whisk together balance of ingredients to create marinade and pour into a small saucepan. Bring to a boil, lower and simmer, uncovered, for 10 minutes. Place tofu pieces in shallow dish and spoon hot marinade over top, covering completely. Allow to marinate for at least 1 hour before serving, but I have found that marinating for as long as 12 hours makes the tofu most delicious. Serve at room temperature with Spicy Peanut Sauce.

Spicy Peanut Sauce
In a small pan, heat a little sesame oil. Saute onion, garlic and chili powder for 2-3 minutes. Add peanut butter, a splash of soy sauce and rice syrup. Stir well and simmer over very low heat for 5 minutes. Remove from heat, stir in lemon juice and enough water to make the sauce as thick or thin as you desire. I like to serve this tofu dish with the marinated slabs on a pool of thick sauce, garnished with fresh scallion slices.

Makes 4-5 servings
