Spicy Cucumber Ribbon Salad
Refreshing and crisp, this salad wll keep you cool as...well, a cucumber during the hottest days of summer.
2 large cucumbers, halved lengthwise, do not peel (unless waxed; organic is best here)
1 carrot, long thin matchstick pieces
1/8 cup brown rice vinegar
1/8 cup umeboshi vinegar
1 teaspoon toasted sesame oil
1 teaspoon brown rice syrup
1/2 teaspoon soy sauce
1-inch piece fresh ginger, grated, juice extracted
2-3 tablespoons black sesame seeds, lightly toasted
Slice cucumber halves lengthwise into paper-thin ribbons. Combine with carrot matchsticks. Mix together the balance of ingredients, except seeds, to make the dressing. Toss with cucumbers and carrots and set aside to marinate for about 30 minutes before serving. Just before serving, toss in toasted sesame seeds. Serve at room temperature or chilled. Makes 3-4 servings.
