S-o-o-o-o-o-o Easy Pizza

Everyone thinks the fastest way to get pizza is to call Domino’s, but once you have made this recipe and see how easily it comes together, you’ll toss the take-out menus in the recycle bin . . . where they belong. No more compromised ingredients for you.

Makes 6–8 servings

1 tablespoon active dry yeast
½ cup lukewarm water
1 teaspoon sea salt
2 tablespoons extra- virgin olive oil
1 cup whole wheat pastry flour
¼ cup semolina flour

1 recipe Pasta Pomodoro Sauce
Vegan mozzarella
10–12 fresh cherry tomatoes, halved
2–3 sprigs fresh basil, leaves removed, left whole

Preheat oven to 425°F. Mix yeast with warm water until it dissolves. Set aside for 2–3 minutes. Stir in salt and oil. Mix in flours to form a soft dough. Roll out dough and transfer to a lightly oiled pizza tin or to a lightly floured pizza stone. Bake for 5 minutes. Remove from oven and spread sauce over the surface of the pizza, leaving about half an inch around the rim exposed. Add vegan cheese and return to the oven to bake for 15–20 minutes, until the crust is browned and firm.

Remove the pizza from the oven and sprinkle with fresh cherry tomatoes and basil leaves. Serve hot.

Note: You may vary the toppings to your taste: onions, peppers, mushrooms, etc.
