Peanut Butter Drops

If these cookies were any easier, they'd bake themselves.  No excuses for not baking healthy now!


1 cup whole wheat pastry flour 
1/2 cup semolina flour     
Pinch sea salt                
1/2 teaspoon baking powder          
1 cup natural peanut butter    
1/4 cup avocado oil   
1/2 cup brown rice syrup
1 teaspoon pure vanilla

Preheat oven to 350 degrees, and line two baking sheets with parchment paper. Mix the dry ingredients together well. Mix in peanut butter, oil, rice syrup and vanilla to make a stiff dough. With wet hands, form two inch balls. Arrange on baking sheets, leaving room for the cookies to spread. With a wet fork, make a crisscross pattern on top of each cookie. Bake for 16 to 18 minutes. Take the cookies from the oven while they are still soft and immediately transfer them to a cooling rack. Substitute nut butters or use sunflower butter as desired to make a different version of this cookie.
