Lemony Applesauce

Sure, you can buy applesauce. But once you have made this recipe, you'll wonder why you ever did.

3 pounds apples, quartered and seeded, peeled, if desired
1/2 cup apple juice
4 thin slices lemon
Pinch sea salt
3 tablespoons brown rice syrup


Place ingredients in pressure cooker and seal the lid. Bring to full pressure over high heat. Reduce heat to low and cook for 2 minutes. Turn off heat and allow pressure cooker to stand, undisturbed until the pressure naturally reduces. Open lid carefully and remove lemon slices. Whisk briskly with a fork for a coarse applesauce or put apples through a food mill for smooth applesauce. 

Makes about 4 cups.
