Lemon-Scented Oven-Roasted Winter Squash

There is nothing quite like the sweet taste of oven-roasted winter squash...oh, wait, when you add the fresh taste of lemon, it absolutely transcends all other squash dishes.


3 cups 1-inch cubes of winter squash
extra virgin olive oil
sea salt
maple-flavored brown rice syrup
grated zest of 1 fresh lemon
juice of 1/2 fresh lemon


Preheat oven to 375 degrees. Place squash cubes in a mixing bowl. Drizzle generously with oil, sprinkle lightly with salt, drizzle with rice syrup and add lemon zest. Stir well to coat squash. Transfer to a shallow baking dish, avoiding overlap. Cover tightly and bake for 45 minutes. Remove cover and return to oven and brown the edges of the vegetables. To serve, simply sprinkle lightly with lemon juice and serve hot. 

Makes 4-5 servings.
