Fresh Daikon And Scallion Salad

This delicate salad is so different and so delicious, you'll find yourself serving it all the time. 


1/2 cup carrot -- matchsticks
2 cups daikon -- matchstick 
8 scallions -- thinly sliced on diagonal 
4 tablespoons fresh flat-leaf parsley 
2 tablespoons umeboshi or red wine vinegar 
1 tablespoon brown rice vinegar 
1 lemon -- juiced 
1 tablespoon stone ground mustard 
2 tablespoons toasted sesame oil 
2 teaspoons brown rice syrup 
1/2 teaspoon soy sauce
1 bunch kale -- steamed
1/2 sheet nori -- shredded

Blanche carrots for 30 seconds, remove, blanche daikon for 1 minute, remove and add to carrots. Make dressing, toss with carrot mix, add parsley and scallions, serve over greens.
