Cantaloupe Soup with Blueberries

During the summer months, when the temperature seems stuck on 'sizzle,' this soup can refresh and restore you. Delicately sweet and satisfying, it's filled with seasonal fruits that keep us strong, vital and fresh as daisies. 


1 each peach -- peel, seed, dice 
1 each cantaloupe -- peel, seed, dice 
1 cup apple juice 
1 pinch sea salt 
1 each lemon -- juiced 
1 teaspoon vanilla extract 
4 sprigs mint 
1 tablespoon blueberries 

Combine peaches, melon, apple juice in pot. Cover, cook for 10 minutes. Remove, puree in processor until smooth. Stir in lemon and vanilla, mix. Place in bowl, cover and chill for 2 hours. Garnish with mint and berries.
