A tasty twist on the classic recipe that will have your guests asking for more…
Ingredients
Dressing:
One half brick silken tofu
2 tablespoons stoneground mustard
1 teaspoon brown rice syrup
One half sheet toasted sushi nori
2 cloves garlic, finely minced
Sea salt, to taste
Juice of 1 fresh lemon
Spring or filtered water
Salad:
1 small head romaine lettuce, washed and hand shredded
3-4 slices whole grain bread, cubed, pan-fried or baked into croutons
Directions
Place all ingredients for dressing in a blender, seasoning with salt to taste. Puree until smooth, adding water slowly to create a smooth thick dressing.
Arrange lettuce and croutons in a salad bowl, spoon dressing over top and toss to coat.
Makes 3-4 servings.
