Apple Fritters

Who doesn't love fritters?  This vegan recipe is loaded with apples, delicately sweet and just rich enough to be a special occasion dessert. i know they're fried. I know that means calories...and I know they're yummy, but it's not like you're going to eat this dessert every day...you won't, right? 

Ingredients

2 apples, sliced into thin slices, cored batter 
1 cup whole wheat pastry flour 
2-3 teaspoons granulated coconut sugar
pinch sea salt 
1 tablespoon kuzu, dissolved in a small bit of cold water 
3/4-1 cup sparkling water

Directions 
Prepare the apples. Prepare the batter by mixing the flour, coconut sugar, salt and dissolved kuzu and sparkling water . Whisk until smooth. Set aside. 

Heat about 3 inches of oil in a deep pot over medium heat. Make sure the oil is hot enough to fry--you can check the temperature by simply submerging a pair of chopsticks in the oil. If bubbles accumulate around the chopsticks, the oil is ready. Raise the heat to high and begin dipping a few apple slices in the tempura batter and dropping them gently into the oil. Fry until crispy and golden brown. The average frying time is 1-2 minutes--try not to leave the food in the oil too long or your food will be oily, instead of crispy. Drain well on paper. 

Repeat with remaining apple slices. Dust fried apples with a light sprinkle of coconut sugar granules. 

Makes 4 servings.
